UTILIZAÇÃO DA PESQUISA OPERACIONAL NA OTIMIZAÇÃO DE PRODUTOS ALIMENTÍCIOS EM UM RESTAURANTE NO MUNICIPIO DE SÃO GONÇALO DO AMARANTE, CEARÁ.
O presente trabalho exibe a
problemática de maximização de lucro da
empresa Gostinho de Amor SGA, cuja principal
fonte de renda é a produção de alimentação. De
acordo com a pesquisa realizada na empresa, foi
relatada a perda de matérias-primas na produção
de bolos e pastéis, matérias que poderiam ser
reutilizadas na produção de novos produtos.
Este trabalho, desse modo, propõe buscar uma
solução de melhoria do processo. O estudo
desenvolveu-se na citada empresa localizada
no município de São Gonçalo do Amarante, CE,
através de uma pesquisa exploratória associada
ao uso da ferramenta da Pesquisa Operacional,
a programação linear, além de um questionário
inicial com a proprietária e a proposição de
modelo de solução. Através do “Solver”, a
ferramenta do Excel utilizada, chegou-se ao
resultado para desenvolver a pesquisa. Com
o estudo, foi possível verificar que em várias
matérias-primas restarão sobra no estoque
total. Foi observado, ainda, que dois produtos
essenciais na produção, não geram perda.
Através da pesquisa operacional com o Solver
pode-se chegar neste resultado apresentado
à proprietária do estabelecimento, que se
propôs a reorganizar a produção. O estudo
possibilitou observar que na empresa estudada
existem limitações financeiras que dificultam o
crescimento da mesma, foi constatado também
o estoque como grande causador de despesas.
Deste modo, o produto final do nosso trabalho
proporcionou uma nova forma de solucionar
problemas já existentes na empresa e de novos
problemas emergente que não tinha a devida
atenção e solução.

Abstract:
The present work presents the
problem of profit maximization of the company
Gostinho de Amor SGA, whose main source
of income is food production. According to
the research carried out at the company, it
was reported the loss of raw materials in the
production of cakes and pastries, materials
that could be reused in the production of new
products. This work, therefore, proposes to
seek a solution to improve the process. The
study was carried out in the mentioned company
located in the municipality of São Gonçalo do
Amarante, CE, through an exploratory research
associated to the use of the Operational

initial questionnaire with the owner and the model proposition of solution. Through the
“Solver”, the Excel tool used, we came to the result to develop the research. With the
study, it was possible to verify that in several raw materials there will be left over in the
total stock. It was also observed that two essential products in the production, do not
generate loss. Through the operational research with the Solver you can arrive at this
result presented to the owner of the establishment, who proposed to reorganize the
production. The study made it possible to observe that in the company studied there
are financial limitations that make it difficult to grow, it was also observed the inventory
as a great cause of expenses. In this way, the final product of our work provided a new
way of solving existing problems in the company and emerging new problems that did
not hav e the proper attention and solution.
