USO DA FERRAMENTA GERENCIAL 5W2H NA IMPLANTAÇÃO DE INSTRUMENTOS DE CONTROLE EM UM RESTAURANTE
A empresa estudada tem como core business o fornecimento de cardápio de massas e vinhos. Mediante supervisão no local visualizou-se a rotina de compras emergenciais e o desperdício de alimentos no descarte direto nas lixeiras, instigando o presente artigo a ter por objetivo implantar instrumentos de controle no estoque, processamento e porcionamento de preparações a partir do uso da ferramenta de gestão 5W2H na proposta de implantação de software Excel 365 de gerenciamento de almoxarifado e de formulário para monitoramento e controle com identificação de responsáveis pelo preparo e registro do quantitativo do porcionamento frio final das preparações. Os resultados da pesquisa indicam que os instrumentos implantados no restaurante se tornaram essenciais para o controle interno e maior eficiência das atividades propostas no local.

Abstract:
The studied company has as core business the supply of pasta and wine menu. Through on-site supervision, the routine of emergency purchases and food waste in direct disposal in the dumps was visualized, instigating the present article with the objective of implementing control instruments in the stock, processing and portioning of preparations using the tool of 5W2H management in the proposal to implement Excel 365 software for warehouse management and form for monitoring and control with identification of those responsible for the preparation and recording of the quantity of the final cold portion of the preparations. The results of the research indicate that the instruments implanted in the restaurant have become essential for the internal control and greater efficiency of the proposed activities in the place.
