FATORES IMPORTANTES QUE INFLUENCIAM NO DESEMPENHO E SAÚDE DOS COLABORADORES DAS UNIDADES DE ALIMENTAÇÃO E NUTRIÇÃO
As Unidades de Alimentação e Nutrição (UAN) envolvem um conjunto de área no setor de alimentação coletiva que tem como objetivo fornecer refeições balanceadas que atendam aos padrões dietéticos higiênicos estabelecidos. Para isso, vários fatores podem contribuir de forma efetiva, sendo o trabalhador o principal agente dessa efetividade. Os trabalhadores representam 70% do trabalho manual e caracterizam mão de obra e força produtiva de alta complexidade e relevância. O objetivo desse estudo foi descrever os fatores importantes que influenciam no desempenho e na saúde dos colaboradores das unidades de alimentação e nutrição. Foram utilizados artigos científicos das bases de dados Scielo e Google acadêmico, além de bibliografia específica da área. Foram utilizados artigos científicos publicados nos últimos 5 anos. Para a realização da busca foram utilizados os descritores: Unidade de Alimentação e Nutrição, condições de trabalho e saúde do trabalhador. Os resultados encontrados, relatam em geral que para o bom funcionamento da UAN é necessário observar as condições de trabalho do colaborador. Estas condições incluem o planejamento efetivo, dando ciência aos colaboradores de seus cargos com respectivas funções, bem como os treinamentos periódicos. Outro fator importante diz respeito a estrutura física e equipamentos, essas devem ser adequados para atender a demanda. Outras condições que influenciam a saúde dos colaboradores estão as condições laborais, ambiente físico-funcional e o uso adequado de EPIS. Com base nos estudos coletados, pode-se concluir que as UANs são ambientes organizacionais com atividades administrativas, técnicas e operacionais que podem influenciar diretamente no desempenho e saúde do trabalhador. Em condições inadequadas pode comprometer não apenas a saúde do trabalhador, mas também pode influenciar no alimento produzido. Portanto, cuidar do bem-estar e saúde destes é importante porque se configura como fator decisivo nos resultados dessas unidades.

Abstract:
The Food and Nutrition Units (UAN) involve a set of areas in the collective food sector that aims to provide balanced meals that meet established hygienic dietary standards. For this, several factors can contribute effectively, with the worker being the main agent of this effectiveness. Workers represent 70% of manual work and characterize a highly complex and relevant workforce and productive force. The objective of this study was to describe the important factors that influence the performance and health of employees in food and nutrition units. Scientific articles from the Scielo and Google academic databases were used, in addition to specific bibliography in the area. Scientific articles published in the last 5 years were used. To carry out the search, the descriptors were used: Food and Nutrition Unit, working conditions and worker health. The results found, generally report that for the good functioning of the FNU it is necessary to observe the working conditions of the employee. These conditions include effective planning, making employees aware of their positions with their respective functions, as well as periodic training. Another important factor concerns the physical structure and equipment, these must be adequate to meet the demand. Other conditions that influence the health of employees are working conditions, physical-functional environment and the proper use of PPE. Based on the studies collected, it can be concluded that the FNUs are organizational environments with administrative, technical and operational activities that can directly influence the performance and health of the worker. In inadequate conditions, it can not only compromise the health of the worker, but can also influence the food produced. Therefore, taking care of their well-being and health is important because it is a decisive factor in the results of these units.
