CONSEQUÊNCIAS DA CRISE HÍDRICA NA PRODUÇÃO DE LEITE DOS PRODUTORES RURAIS E OS IMPACTOS CAUSADOS AO LATICÍNIO BIMBO DA CIDADE DE AFONSO CLÁUDIO-ES
O objetivo do trabalho foi determinar a influência da crise hídrica na bacia leiteira da cidade de Afonso Cláudio no estado do Espírito Santo, avaliando a entrega do produto no laticínio Bimbo. A pesquisa foi realizada com produtores de vaca de leite da zona rural da cidade, onde foram aplicados questionários a fim de saber como os produtores lidam com a crise hídrica e se alguma atitude é tomada diante das consequências causadas pela crise. Foi realizada entrevista ao gerente do laticínio para conhecer as reais consequências da crise hídrica no laticínio diante da redução da entrega do leite no laticínio e quais medidas adotaram para reduzir os impactos na produção. Os resultados alcançados foram que a crise afeta diretamente na produção do leite, pois a falta de chuva torna as pastagens escassas, e deixa as fontes fornecedoras de água para as propriedades em níveis críticos, assim a produção leiteira do gado cai, automaticamente reduzindo o fornecimento do leite ao laticínio. Com a redução de matéria prima, o laticínio teve que adotar algumas medidas desde demissão de funcionários até o aumento do custo dos produtos no mercado para consumidores, reduziu a vazão de água nas mangueiras da linha de produção e buscou conscientizar os funcionários da área de produção para ter um consumo menor de água no laticínio.

Abstract:
The objective of this work was to determine the influence of the water crisis in the milk basin of the city of Afonso Cláudio in the state of Espirito Santo, evaluating the delivery of the product in the Bimbo dairy. The research was carried out with producers of dairy cows in the rural area of the city, where questionnaires were applied in order to know how producers deal with the water crisis and if any attitude is taken in the face of the consequences caused by the crisis. An interview was conducted with the dairy manager to learn the real consequences of the dairy water crisis in the face of reduced milk delivery in dairy and what measures were taken to reduce the impacts on production. The results have been that the crisis directly affects milk production, since the lack of rain makes the pastures scarce, and leaves the sources of water for the properties at critical levels, thus the milk production of the cattle falls, automatically reducing the supply from milk to dairy. With the reduction of raw material, dairy had to adopt some measures from the dismissal of employees to the increase of the cost of products in the market for consumers, reduced the flow of water in the hose of the production line and sought to raise the awareness of the employees of the area of production to have a lower consumption of water in the dairy.
