Abstract: Therapeutic and/or gourmet essential oils constitute one of the most important groups of raw materials for various industries, notably those of perfumery, pharmaceuticals and food. The use of essential oils as a flavoring by the food industry is notified as a food additive, that is, gourmet, because “flavor” refers to flavor, which would be a combination of taste and smell. The objective of this work was to verify the antibacterial action of gourmet essential oils (100%): asafetida (Ferula foetida) and lemon-scented gum (Corymbia citriodora), individually and in combination. Gourmet essential oils were soaked in filter paper discs with a diameter of 6 mm suitable for antibiogram, placed in the center of Petri dishes, previously seeded with the following microorganisms: Bacillus cereus, Bacillus subtilis, Escherichia coli, Salmonella Enteritidis, Salmonella Typhimurium and Staphylococcus aureus, later incubated at 35 ºC / 24 and 48 hours. The antimicrobial action was considered effective for those who had halos equal to or greater than 10 mm. Asafetida essential oil demonstrated effective antimicrobial action on all tested bacteria, with the largest halos (25 mm) observed for B. subtilis and S. aureus. Regarding lemon-scented gum, it effectively inhibited all bacteria used in the study, showing halos of 90 mm (bactericidal action). The best result obtained was for the lemon-scented gum essential oil on all bacteria (90 mm halos).
