Abstract: Essential oils (EOs) are a group of relevant chemical substances obtained from different plant sources and/or plant tissues. Its benefits have been related to the existence of bioactive substances, such as monoterpenes and sesquiterpenes, which have positive qualities against crucial problems in the food sector and may enhance sustainable production in addition to the recognized organoleptic characteristics. This chapter aims to highlight current knowledge on the advantages of integrating EOs in the food industry, ensuring safe and high-quality food, in their abilities as natural additives such as preservatives, antioxidants, and flavorings, partially replacing some synthetic additives in accordance with sustainable trends and the 2030 agenda's goals.
