Abstract: This study addresses the growing and far-reaching threat of antimicrobial resistance in animal products, highlighting the relevance of advanced molecular biology techniques in identifying genetic markers associated with this resistance. In addition, it emphasizes the urgent need for an interdisciplinary approach, with the "One Health" strategy, to tackle the challenges. The research reveals that antimicrobial resistance not only impacts single health and food safety, but also has significant implications for environmental sustainability, as resistant microorganisms can spread in different ecosystems, including animal products intended for human consumption. It is therefore urgent to adopt appropriate measures at all stages of food production, processing and consumption, as well as in hospital environments, to contain the spread of this problem which threatens the efficacy of antimicrobials and, consequently, human and animal health on a global scale.
