Abstract: The aim of this study was to analyze scientific publications and patents on the use of pineapple as an ingredient in cereal bars. For the research, 10 articles and 6 patents were selected from the GOOGLE ACADÊMICO, PERIÓDICOS CAPES and ESPACENET databases, with only papers that used pineapple as an ingredient in cereal bar production being selected and patents and repeated publications discarded and bibliographic review papers removed. The entire body of the work was used for data extraction, and the following variables were analyzed from the publications: part used, products, publication vehicles, institution, authors, objective, conclusion and other ingredients. And for patents, the following variables were analyzed: part used and products. The results for the number of publications by publication vehicle, institution, author and year of publication were scattered, demonstrating the low maturity of research in the area. The peel was the part of the pineapple most used in publications and the pulp in patents, dehydrated pineapple was the product most used in both publications and patents and sugar and hydrogenated vegetable fat were the other cereal bar ingredients most frequently used in publications. In view of the low level of maturity of research and development in this area, it is concluded that there is promise for the development of new products that can meet the needs of the market by using pineapple pulp as an ingredient, but also explore the full use of pineapple, such as the use of the peel, as well as providing a product with healthier ingredients than sugar and hydrogenated vegetable fat in its composition.
