Abstract: The relevance of food composition to human health has increased consumer interest in consuming fruits, vegetables, and foods enriched with bioactive compounds and nutraceuticals. This fact has led to growing attention from suppliers to reuse agro-industrial waste rich in healthy plant ingredients. In this sense, grapes have been identified as a rich source of bioactive compounds. Currently, up to 210 million tons of grapes (Vitis vinifera L.) are produced annually, with 15% of grapes produced destined for the wine industry. This socioeconomic activity generates a large amount of solid waste (up to 30%, by weight of the material used). Waste from the wine industry includes biodegradable solids such as stems, skins, lees, pomace, and seeds. The bioactive compounds of wine industry byproducts have shown interesting health-promoting activities both in vitro and in vivo. This is a comprehensive study on the phytochemicals present in the byproducts of this sector, as well as the biological activities demonstrated by their bioactive compounds regarding their potential for human health.
