Abstract: ABSTRACT: Even with the modernization and advances in technology, biotechnology faces challenges to be implemented and disseminated among the commercial sector. A challenge for the biotechnology industry is the distillation operations, as they have a significant impact on the cost of products, for example. Therefore, the present work seeks to elucidate the relationship between the manipulation and use of enzymes for the food industry. Such catalytic proteins can be used in connection with protein compounds in food biosafety. With more usage recommendations and more tests, new applications could be analyzed. The search for natural compounds that reduce food degradation, promote greater biosecurity and that do not negatively affect food has emerged. As one of the main methods analyzed, the antibiotic effects of enzymes occur through the interaction of the compound with the phospholipids of the plasmatic membrane. In this way, enzymes can be used in food safety, avoiding contamination and greater use for consumption.
