Abstract: The objective was to evaluate the hygienic-sanitary conditions of establishments that sell fresh meat in Teresina-PI, considering the standards established by current legislation. The importance of food safety and compliance with health standards to protect public health is highlighted. The research was carried out through data collection at the Augusto Ferro public market (Mafuá market) in Teresina in different establishments that sell fresh meat. A questionnaire based on ANVISA RDC 216/2004 was used to evaluate the hygienic-sanitary aspects, without identifying the locations or participants. Aspects related to areas such as physical facilities, handler hygiene and meat storage conditions were observed. The results revealed multiple non-conformities in several aspects. Physical facilities had dirty floors, leaks and a lack of adequate storage space for meat. There were failures in the hygiene of handlers, lack of adequate protection of the meat and lack of refrigeration, which facilitates contamination. The presence of urban pests was also identified. The findings highlight the urgent need for improvements in establishments to ensure compliance with RDC. From what has been observed, it can be seen that corrective actions are essential, such as training handlers, adjustments to physical facilities, implementation of hygiene practices and more rigorous monitoring by health authorities. These measures are essential to promote food safety and protect consumer health. In view of the above, it is concluded that the verified establishment does not comply with the provisions of the legislation, as they present precarious hygienic and sanitary conditions that compromise the quality of the fresh meat.
