Abstract: Potato crops with pigmented pulp present a high expectation for the processing industry, due to their high concentration of natural antioxidant compounds and can be healthy compared to traditional potato chips. This study was carried out with the purpose of selecting potato clones with pigmented pulp with quality attributes for industrial processing. The experiment was carried out in Llama, Cajamarca, Peru. A completely randomized block design with three replications was used. The treatments consisted of 16 clones of purple pulp and as a control the native cultivar Jerezana. The comparison of means was done using Duncan's test at 5% significance. The results showed that most of the clones are within the recommended range for chips, chips and flakes. Clone CIP302288.14 produced high anthocyanin content (550mg/kg), good yield (1627.3 g plant-1), high dry matter (24.93%), specific gravity (1,099 gcm-3), low level of reducing sugars (0.043%) and 1.33 frying color. Therefore, it is acceptable for the processing industry in the form of flakes, strips and flakes, due to its significant effects on quality parameters.
