SEGURANÇA ALIMENTAR DE PRODUTOS DE ORIGEM ANIMAL EM FEIRAS E MERCADOS NA CIDADE DE MANAUS, AMAZONAS
A alimentação é essencial para a
manutenção da vida. Uma alimentação saudável
pode ser definida como aquela que além de
ser balanceada, colabora com a constituição
de seres humanos saudáveis. Devido à
preocupação com a qualidade de vida, o ser
humano procura continuamente, inserir em sua
dieta alimentos de procedência conhecida. O
presente trabalho teve objetivo promover as
diretrizes da segurança alimentar para produtos
de origem animal em feiras e mercados na
cidade de Manaus. Aplicou-se questionários
nos mercados e feiras de acordo com a
normativa vigente, em seguida tabulou-se os
dados para identificar os problemas existentes.
Após a análise dos dados constatou-se diversas
irregularidades quanto às condições higiênicosanitárias das instalações e manipuladores,
estas podem ser apontadas como uma das
causas para a fragilidade da cadeia produtiva
dos alimentos fazendo-se necessário o
conhecimento do manual de boas práticas em
manipulação dos alimentos em conjunto com
a capacitação continuada dos manipuladores
quanto aos cuidados higiênico-sanitários.

Abstract:
Food is essential for the
maintenance of life. A healthy diet can be
defined as one that besides being balanced,
collaborates with the formation of healthy
humans. Due to concerns about the quality of
life, the human being continually seeks to insert
into your diet known origin of food. This work
was intended to promote the guidelines of food
safety to animal products in fairs and markets
in the city of Manaus. Applied questionnaires
in the markets and fairs in accordance with the current regulations, then if-tabulated data to identify the problems. After analyzing the
data it was found several irregularities about the sanitary conditions of the facilities
and manipulators, these can be identified as one of the causes for the weakness of
the productive chain of the food making it necessary knowledge of the manual of good
practices on handling food together with the continued training of handlers regarding
the hygiene and health care.
