Abstract: Employee turnover in the restaurant sector represents a considerable challenge that affects the stability of operations and the quality of service. This analysis examines the situation of the El Limoncito restaurant, located in Villa de Álvarez, Colima, Mexico. In this place, the high turnover of waiters has caused high costs and has impacted on the effectiveness of the organization. Through a combined methodological approach, the elements that influence rotation are analyzed, such as the work environment, working conditions, the absence of stimuli and the possibilities of growth. The findings achieved will facilitate the identification of essential tactics to enhance the permanence of human talent, such as the implementation of professional growth programs, the assessment of performance and the improvement of the work environment. It is anticipated that the implementation of these tactics will not only benefit El Limoncito but will also serve as a reference for other companies in the culinary sector that encounter similar difficulties.
