QUANTIFICAÇÃO DOS ÁCIDOS GRAXOS TRANS E SATURADOS EM BOLACHAS RECHEADAS E BOLACHAS WAFERS PRODUZIDAS NO BRASIL
Diversas evidências científicas comprovam que os ácidos graxos trans são prejudiciais à saúde. A Organização Mundial da Saúde (OMS) considerando a presença da gordura trans nos alimentos recomenda a sua eliminação até o ano de 2023. No Brasil a RDC número 54 de novembro de 2012 da ANVISA estabelece que, somente os alimentos que apresentarem teores de gorduras trans menor ≤ 0,1 g por porção e ácidos graxos saturados mais trans até 1,5 g/porção podem alegar zero trans na rotulagem. As bolachas recheadas e wafers são importantes representantes de alimentos ultra processados contendo elevados teores de açucares e gorduras, sendo muito consumidas pelo seu baixo custo e acessibilidade. A partir destas observações, o objetivo desse estudo foi o de avaliar os teores de gordura trans e saturadas por cromatografia gasosa (método 996.06 da AOAC) em bolachas recheadas e wafers, comercializadas na cidade de São Paulo, verificando se a rotulagem está de acordo com a legislação. Foram analisadas 31 bolachas recheadas e 33 bolachas wafers, sendo encontrados teores de gorduras trans de 0,01 a 1,56 g/porção e 0,01 e 2,56 g/porção nas bolachas recheadas e wafers respectivamente. Nas bolachas com a alegação zero trans na rotulagem a soma da gordura saturada e trans variaram de 1,67 a 3,31 g/porção e de 1,95 a 4,16 g/porção respectivamente nas bolachas recheadas e wafers. A princípio todas as amostras zero trans estariam em desacordo com a legislação, mas, através do teste t-student com p-valor < 0,01, pode-se observar que doze bolachas recheadas e vinte e uma bolachas wafers estavam em desacordo com a RDC 54. Diante disso, ratifica-se a necessidade premente de modificações na legislação vigente e de fiscalizações mais frequentes pelos órgãos competentes.

Abstract:
Several scientific evidences prove that trans fatty acids are harmful to health. The World Health Organization (WHO), considering the presence of trans fat in food, recommends its elimination by the year 2023. In Brazil, the DRC number 54 of November 2012 of ANVISA establishes that only foods with trans fat content less than ≤ 0.1 g per serving and saturated fatty acids plus trans up to 1.5 g / serving can claim zero trans on the label. The stuffed wafers and wafers are important representatives of ultra-processed foods containing high levels of sugars and fats, being widely consumed due to their low cost and accessibility. From these observations, the objective of this study was to evaluate the contents of trans and saturated fat by gas chromatography (method 996.06 from AOAC) in filled cookies and wafers, sold in the city of São Paulo, checking if the labeling is in accordance with legislation. 31 filled wafers and 33 wafers were analyzed, with levels of trans fats ranging from 0.01 to 1.56 g / serving and 0.01 and 2.56 g / serving in the filled wafers and wafers, respectively. In the wafers with the claim zero trans on the labeling the sum of saturated and trans fat ranged from 1.67 to 3.31 g / portion and from 1.95 to 4.16 g / portion respectively in the filled wafers and wafers. At first, all zero trans samples would be at odds with the legislation, but, through the t-student test with p-value <0.01, it can be observed that twelve filled cookies and twenty-one wafer cookies were at odds with the RDC 54. In view of this, the urgent need for changes in the current legislation and more frequent inspections by the competent bodies is ratified.
