Abstract: Sugarcane juice is a beverage widely marketed in Brazil by street vendors and snack bars, mainly because of its low cost. However, the beverage is an excellent substrate for the development of microorganisms due to being a constant target of mishandling, making it more susceptible to contamination that can result in damage to the consumer's health. Coliform bacteria are the most present in this type of food, since they are indicators of sanitary quality. Therefore, considering the characteristics involved in the commercialization of sugarcane juice, and the possibility of it becoming a vehicle for disease, the present review aims to evaluate the microbiological quality of sugarcane juice marketed by formal and informal establishments (street vendors) in Brazil. The inclusion criteria were articles published between the years 2006–2022, in Portuguese and English languages that address the analysis of microbiological quality in sugarcane juice sold by formal and informal establishments (street vendors). With regard to the exclusion criteria, articles related to other types of analysis and which do not address microbiological analysis will not be included in this review. According to the results found in the chosen articles, it is possible to verify that the microbiological quality of sugarcane juice is unsatisfactory, both in formal and informal trade, thus suggesting the need for sellers to receive training in Good Practices so that sugarcane juice does not pose risks to the consumer's health.
