Abstract: Technological prospecting for alternative proteins as a solution to meet the growing demand for proteins in a sustainable and efficient way. In this study, technological prospecting for future market perspectives is presented. The main sources of alternative proteins are non-traditional plant and animal sources, in addition to an overview of production and processing technologies. However, interest in the food industry in this area is growing and the search for more scientific research means that this study presents the technological prospection of alternative proteins and analyzes innovations and trends that are evolving food systems to meet the growing global demand for sustainable sources of protein. and its innovations in the scientific field. Technological prospecting plays a vital role in identifying paths to achieving sustainable food security, highlighting its importance in the face of global challenges related to food production, such as environmental impacts. The text addresses prospecting methodology, such as patent analysis. Despite challenges such as high costs and strict regulations, alternative proteins have significant potential to transform the global food chain, supported by scientific advances, growing investments and changes in consumption habits.
