Abstract: Monofloral honeys obtained from Ulmo have been associated with pharmacological properties for use in skin pathologies. This plant of the Eucryphia cordifolia species is native to the southern regions of Chile. Ulmo honey is rich in minerals such as calcium, zinc, iron, vitamins and other organic compounds and has antimicrobial, balsamic and healing properties. This study was based on the hypothesis that the antifungal action of ulmo honey is linked to its polyphenol content. The objective was to evaluate its antifungal effect in vitro against the ATCC 29213 strain of Candida albicans and determine the polyphenolic and flavonoid compounds present in the bee product. Antimicrobial activity assays were performed in triplicate using an antibiogram in Petri dishes with candida-enriched medium and filter paper discs.The mean and standard deviation were calculated. Total polyphenols were 10.8 mg/100g (equivalent to grams of pinocembrin) and total flavonoids were 4.6 mg/100g (equivalent to grams of quercetin).Values of MIC for ulmo honey were 10.1 ± 1.7 mm, compared to the control Miconazole of 15.5 ± 3.2 mm.ANOVA Multiple Comparison test with Tukey's post test was used for statistical analysis.The results suggest antimicrobial properties of ulmo honey related to its high polyphenol content; however, additional experimental studies are required to understand the underlying mechanisms of its antifungal action.
