Abstract: Sweet potatoes, scientifically called Ipomoea potatoes L. (Lam), are a vegetable with satisfactory development under diverse abiotic factors, promoting the generation of alcohol between 130 and 140 liters/tons of raw material. With broad agronomic capabilities, the sweet potato crop provides, from its tuberous roots, human food rich in vitamins, the production of ethanol and its branches, animal feed. The production of ethanol from sweet potatoes is based on the disruption of the glycosidic bonds in starch, generating fructose and glucose molecules which, after being hydrolyzed, become suitable for generating fuel. With this, the objective was to break the glycosidic bonds of sugars, complexes of sweet potato tuberous roots that do not present a satisfactory commercial standard, coming from family agriculture and local commerce, using enzymatic catalysis for the production of ethanol, in order to enact alternative raw material for alcohol production.
