POTENCIAL ECONÔMICO DOS SUB-PRODUTOS PROVENIENTES DA INDÚSTRIA DE PESCADO: ESTUDO DE CASO DA FILETAGEM DE PEIXE NUMA EMPRESA LOCALIZADA NO MUNICÍPIO DE VIGIA-PA
A industria beneficiadora de pescado
é responsável por gerar grandes quantidades
de resíduos sólidos orgânicos, que são
descartados de maneira inadequada, e causam
diversos problemas ambientais e sociais. Vale
ressaltar que a maioria desses subprodutos são
fontes, principalmente, de proteína e lipídeos
que podem ser utilizados como matéria-prima
para a elaboração de diversos produtos de valor
agregado. Diante disso, o presente trabalho tem
como objetivo, buscar na literatura as possíveis
alternativas de destinação dos subprodutos
que são gerados pela indústria pesqueira.
Através do estudo de caso realizado em uma
indústria localizada no município de Vigia-PA,
identificar as principais etapas do processo de
filetagem que são responsáveis por gerar esses
resíduos e propor as possíveis alternativas para
a destinação correta desses subprodutos.

Abstract:
The fish processing industry is
responsible for generating large quantities
of organic solid waste, which are disposed of
inappropriately, and cause various environmental
and social problems. It is worth mentioning that
most of these by-products are sources of protein
and lipids that can be used as raw material
for the elaboration of several value-added
products. Therefore, the present work aims to
search the literature for possible alternatives
for the destination of the by - products that are
generated by the fishing industry. Through the
case study carried out in an industry located
in the municipality of Vigia-PA, identify the
main stages of the filleting process that are
responsible for generating these residues and
propose the possible alternatives for the correct
destination of these by-products.
