PERFIL FARMACOTOXICOLÓGICO E DANOS EM SISTEMAS ORGÂNICOS
As mudanças nos padrões
dietéticos da sociedade causaram o aumento
no consumo de alimentos industrializados, com
maior durabilidade e praticidade, porém com
maiores percentuais de aditivos alimentares.
Apesar da importância do uso de aditivos
para a indústria de alimentos, ampliou-se a
atenção quanto ao uso e segurança de aditivos
alimentares em virtude da exposição contínua
em quantidades relevantes numa diversidade
de alimentos, considerando que muitas
reações adversas têm sido associadas à
ingestão desses aditivos. Portanto, o presente
trabalho tem por objetivo mostrar a toxicidade
dos aditivos mais consumidos sob o ponto de
vista da legislação nacional e internacional. As
classes de aditivos que mais vem recebendo
atenção do ponto de vista toxicológico são
aromatizantes, corantes, conservantes,
edulcorantes, realçadores de sabor e
antioxidantes por apresentarem relações com
alterações em nível celular e sistêmico em
diversos órgãos, principalmente do sistema
gastrintestinal, no sistema nervoso central
(snc) e no sistema nervoso autônomo, como
também hipersensibilidade, teratogenicidade,
embriotoxicidade, nefrotoxicidade,
hepatotoxicidade, diabetes tipo II, bronquiolite
obliterante e até morte. Embora amplamente
utilizado pelos consumidores, com importância
para indústria alimentícia e fiscalizados quanto
aos riscos à saúde humana por parte dos órgãos
reguladores, inúmeras são as publicações
que demonstram a relação de toxicidade
com algumas classes de aditivos alimentares, o que exige, constantemente, o
aperfeiçoamento das ações sanitárias de controle alimentar visando à proteção à
saúde da população e a atualização de regulamentos técnicos sobre uso e limites
diários.

Abstract:
Changes in the society dietary patterns led to the increase in the
consumption of processed foods, greater durability and practicality, but with higher
percentages of food additives. In spite of the importance of additives for the food industry,
there have been given much attention regarding the use and safety of food additives due
to continuous exposure in relevant quantities in a variety of foods, considering that many
adverse reactions have been associated with ingestion of such additives. Therefore,
the present work aimed to show the toxicity of the most common additives from the
point of view of the legislation. The classes of additives most used found have been
receiving attention from the toxicological point of view, such as flavorings, colorants,
preservatives, sweeteners, flavor enhancers and antioxidants, due to their relationship
with alterations at the cellular levels in various organs especially from gastrointestinal
system, were mentioned, central nervous system and autonomic nervous system, as
well as hypersensitivity, teratogenic, embryotoxic, nephrotoxicity, hepatotoxicity, type II
diabetes, bronchiolitis obliterans and even death. Although widely used by consumers,
important for the food industry and supervised for human health risks by regulatory
agencies, many publications have shown the relationship of toxicity with some classes
of food additives, which constantly requires improvement health control actions to
protect the population's health and modernizing of technical regulations about use and
daily limits.
