Abstract: The aim of this study was to evaluate the quality parameters of informal milk sold on the island of São Luís, Maranhão, in northeastern Brazil. We used 30 samples acquired at random from bakeries and shops on the island, and then taken in an isothermal box containing recyclable ice to the Food Technology Laboratory at the State University of Maranhão (UEMA). The following physicochemical analyses were carried out: alizarol, titratable acidity, cryoscopic index, fat content, relative density at 15ºC, total solids (TS), solids-not-fat (SNF), enzyme tests (alkaline phosphatase and peroxidase), antibiotic residues in milk and somatic cell count (SCC). There was a significant percentage of samples outside the normal range for alizarol (6.6%), titratable acidity (43.3%), cryoscopic index (53.3%), fat content (6.6%), relative density at 15ºC (50%), TS (53.3%), SNF (63.3%), peroxidase enzyme (13.3%) and SCC (73.3%). On the other hand, the results of the alkaline phosphatase enzyme and antibiotic residue tests in the milk were within the standards recommended by the legislation (RIISPOA/2020 and IN 76/2018). Based on the results obtained, there is a need for greater inspection by municipal health surveillance of the informal marketing of milk in these establishments.
