Abstract: This project presents guidelines for treating effluents from the fruit juice industry, which contain a high organic load due to residues such as pulp, peels, seeds, and phenolic compounds. Brazil, as one of the largest producers and exporters of fruit juice, particularly orange juice, generates a significant amount of these effluents, making the implementation of efficient treatment systems essential. The proposal includes the design and implementation of treatment plants that encompass steps like screening, grit removal, sieving, and facultative ponds. The treatment aims to effectively remove organic matter, nitrogen, and phosphorus present in the effluents, complying with environmental standards and preventing issues such as the eutrophication of receiving water bodies. The project adheres to current environmental legislation in Brazil and employs established methodologies, demonstrating high efficiency in the removal of Biochemical Oxygen Demand (BOD), achieving up to 97% in complete-mix aerated lagoons. Furthermore, the study emphasizes the importance of the proper selection of equipment and treatment stages to ensure environmental preservation and regulatory compliance. This work significantly contributes to the development of sustainable practices in the fruit juice industry, promoting the efficient treatment of the effluents generated.
