O IMIGRANTE ARABE E SUA COZINHA COMO INSTRUMENTO DE AFIRMAÇÃO E IDENTIDADE NA ATUALIDADE
Esta pesquisa, de caráter etnográfico, bibliográfico e de história oral, demonstra o enraizamento da cozinha árabe para com os povos descobridores e colonizadores anterior aos descobrimentos e ao processo imigratório neste país e nesta cidade. Evidencia a utilização, por parte dos imigrantes, desta culinária como um dos instrumentos de afirmação; assim como a aceitação e incorporação desta cozinha na dieta cotidiana dos cidadãos nativos. Ao longo do curso histórico aponta adaptações e permanências em direção a formação do gosto e paladar brasileiro. Nos dias de hoje exprime as incongruências temporais para com a produção e apreciação destes pratos e o surgimento dos fast foods de comida árabe. Exprime ainda, a problemática provocada pela onda imigratória devido a Primavera Árabe, com ênfase no direcionamento destes recém imigrados à cozinha árabe, como meio de afirmação e manutenção dos costumes da etnia. Como reflexão final traz análise identitária desta cozinha, hoje adaptada e abrasileirada.

Abstract:
This research, of an ethnographic, bibliographic and oral history character, demonstrates the rooting of Arab cuisine towards the discovering and colonizing peoples prior to the discoveries and the immigration process in this country and in this city. It highlights the use, by immigrants, of this cuisine as one of the instruments of affirmation; as well as the acceptance and incorporation of this cuisine in the daily diet of native citizens. Throughout the historical course he points out adaptations and permanences towards the formation of Brazilian taste and taste. Nowadays it expresses the temporal inconsistencies with the production and appreciation of these dishes and the emergence of fast foods with Arab food. It also expresses the problems caused by the immigration wave due to the Arab Spring, with an emphasis on directing these newly immigrants to Arab cuisine, as a means of affirming and maintaining ethnic customs. As a final reflection, it brings an indentity analysis of this kitchen, nowadays adapted and Brazilian.
