Abstract: Chicken meat is the main animal protein consumed in the world and a relevant aspect for the consumer in the acceptability of chicken meat is the promotion of animal welfare at all stages of the production chain, from creation to slaughter, especially in European countries. Stunning is the process that most aims to improve animal well-being during humane slaughter, as it allows the animal to become unconscious due to the absence of pain at the time of bleeding. Therefore, the present review aimed to discuss the broiler stunning techniques most frequently used in slaughterhouses, with an emphasis on animal welfare and meat quality. For this review, we consulted dissertations and scientific articles selected through a search in the PubMed and Google Scholar databases. As a result, it was observed from reports in the literature that European countries are those that most require meat quality associated with animal welfare, evidenced by the largest number of publications relating to the topic. When performing electrical stunning, voltages lower than 65 volts can compromise animal welfare and meat quality, potentially delaying the onset of Rigor mortis. When evaluated in controlled atmosphere stunning, Rigor mortis appeared more quickly, presenting the best result with the gradual induction of unconsciousness and bird discomfort was also observed in CO 2 concentrations lower than 40%. It should be noted that Brazil has legislation that aims to protect the well-being of animals, as it does not allow death to occur during the stunning phase, this fact being important above all because the country is the main exporter of chicken meat in the world. From the analysis of the publications, it was possible to conclude that stunning in a controlled atmosphere is a method that results in less stress on chickens compared to the electrical method and that gaseous stunning facilitates slaughter operations, providing a reduction in operational risks and ensuring animal welfare by maintaining meat quality, thus reducing economic losses for the food industry.
