Abstract: The creation of Brazilian cuisine constituted the food base of each region, this fact originated through the settlement of the Brazilian territory, this generated miscegenation of races, which provided a marked influence on the culture of each region of Brazil. Thus, food is something that does not only encompass the act of eating food, it also involves belief and rituals. It is capable of highlighting peculiarities, ceasing to be just a physiological act to also be a social act. Cultural, nutritional, social and economic factors govern eating behavior, and together they make up what we recognize as eating habits. The different Brazilian regions have a food identity rich in beliefs and habits that characterize the uniqueness of each culture, the Northeast region is often characterized by its ingredients and preparations. Therefore, studies of recipes for typical preparations can reveal a little about eating habits of people from Pernambuco. Thus, the objective of this research project was to study the recipes of regional preparations and understand the eating habits of Pernambuco. By crossing the bibliographies searched in indexed databases or not, it was possible to find a total of 306 recipes in the analyzed literature, of which 17 were selected because they were cited more than five times and were the most consumed in the state of Pernambuco. As a criterion for choosing the recipes, the number of mentions in the examined bibliographies, which had up to five notes, was used. In this way, the recipes were transformed into technical sheets in order to strengthen the standardization in production and the preparations were photographed during their execution.
