ÍNDICE DE RESTO INGESTA EM UNIDADES DE ALIMENTAÇÃO E NUTRIÇÃO COMO INSTRUMENTO GERENCIAL

The food and nutrition unit (UAN) is a food production and distribution system. In this case, the use of quality indicators as a management tool helps to clearly and objectively highlight the administrative process. Among the indicators, rest-ingestion stands out, which is the amount of food returned to the plate by the diner, food served and not consumed. Thus, this study aimed to analyze the findings on the rest-ingestion index in food and nutrition units as a management tool. This is a literature review, using articles indexed in the Scientific Electronic Library Online (SciELO), Virtual Health Library (BVS), Latin American and Caribbean Literature on Health Sciences (LILACS), published between 2017 and 2022. We found 10 works that presented the desired characteristics of the study. It was verified that the control of the text-ingestation is essential in a FNU and is characterized as a useful instrument not only for the control of food waste, but also as an indicator of quality, since a lower percentage of the rest means greater acceptability of the products. diners to the menu
