HOSPITALIDAD DE BOTECO (“TABERNA”): UN BREVE ESTUDIO SOBRE SUS DIMENSIONES PÚBLICAS Y PROMOCIÓN DE IDENTIDADES EN LA CIUDAD DE RIO DE JANEIRO.
Lugares tradicionalmente vinculados al comedor carioca, los botecos (tabernas), que en otras ciudades son llamados botequines y acumulan muchas denominaciones populares, son espacios que reúnen historias y memorias sociales de lucha y afirmación de identidades étnicas y de clase, entre otras. Si bien la sociabilidad de los botecos ya se ha estudiado en el campo de la sociología y las ciencias humanas, solo más recientemente se ha investigado este espacio con ofertas de alimentos y bebidas en el campo de la gastronomía. En este artículo también se estudian los botecos en el ámbito de la hospitalidad. Combinando los artículos consultados con investigaciones de campo, de carácter etnográfico, se observó que una clave para comprender el rol social de los botecos, en el contexto de la hospitalidad, se puede leer a partir de los conceptos de accesibilidad, legibilidad e identidad propuestos por Lucio Grinover (2007). Estos conceptos sacan a la luz los botecos como espacios de integración, aceptación y ciudadanía.

Abstract:
Places traditionally linked to the Rio de Janeiro commensality, the botecos, which are called botequins in other cities and accumulate many popular designations, are spaces that bring together the social histories and memories of the struggle of ethnic and class identities, among others. Although the sociability of the botecos has been studied in the fields of sociology and human sciences, it has only recently been investigated in the field of gastronomy. In this article, the botecos are also being studied with the contribution of the field of hospitality. Gathering the articles consulted with field research, of an ethnographic nature, it was found that a key to understand the social role of botecos, in the context of hospitality, can be read from concepts of accessibility, readability and identity standards by Lucio Grinover (2007). These concepts bring to light botecos as spaces for integration, acceptance and citizenship.
