Abstract: This research addresses the Portuguese legacies that remain in the savory recipes of Maranhão cuisine. The general objective of the study is to understand how the food traditions inherited by the Portuguese are passed on from parents to children through the recording of culinary practices of traditional recipes from Maranhão. The research is descriptive and qualitative of the collected data, using questionnaire with the respondents, bibliographic survey based on reading, research on specialized sites and studies of authors in the area of Lusitanian, Brazilian and Maranhão gastronomy, and history of gastronomy. The survey was carried out with 25 families and pointed out that families from Maranhão perpetuate their recipes by transmitting them between generations and practicing them in their daily lives. The survey also indicated that many do not recognize these recipes as originating from Portuguese cuisine, but stated that they bring an affective memory linked to family gatherings and, for the most part, they elected cuxá rice as the dish that best represents Maranhão cuisine.
