Abstract: Due to the hustle and bustle of everyday life, people are increasingly abandoning healthy eating habits, starting to consume fast- prepared foods, that is, industrialized products. Data warn that industrialized products are rich in fructose and, if consumed in excess, may increase the risk of developing obesity, Type 2 Diabetes Mellitus, metabolic disorders and Non- Alcoholic Fatty Liver Disease (NAFLD). Based on this assumption, the main objective of this study is to analyze the impact of dietary changes in triggering NAFLD. Therefore, it is fundamental to discuss the excessive consumption of fructose, since this, in the last five decades, has shown substantial growth with the incorporation of high fructose corn syrup (HFCS) in industrialized products, mainly in soft drinks and bakery products. The methodology adopted to carry out this study used bibliographical research, in databases such as Pubmed, Scielo and other sources related to the theme. It was concluded from this research that fructose is a remarkable factor in triggering NAFLD, however, there are other factors that can trigger this pathology, such as, for example, the exacerbated consumption of food products manufactured with HFCS, in addition to the increasing consumption of sucrose. Due to the lack of studies with statistical data in Brazil, it is suggested that more in-depth research on DHGNA be carried out based on statistical surveys of the reality of the number of people affected, not only at the national level, but also at the regional level.
