Abstract: The purpose of this research was to determine the frequency and risk factors of total coliforms in spicy creams from delicatessens in the city of Jaén-Perú, 2023. An experimental type of research stands out, with a quantitative and cross-sectional approach. A total of 28 samples of chili creams were obtained from different delicatessens in the city of Jaén, with non-probabilistic sampling for convenience. The samples were taken under sterile conditions and transported to a T0 (40C), to be processed in the laboratory of the National University of Jaén, subsequently planted in a coliform agar culture at a T0 (370C) for a period of 24 hours. . For the interpretation of the data obtained after the analysis, the limits established by NTS No. 071 – MINSA/DIGESA - V. 01 “Sanitary standard that establishes the microbiological criteria of Sanitary Quality and Safety for consumer foods and beverages” were used. human". The results obtained show that of the total, 85.7% of the samples contain total coliform bacteria, which are 1100 CFU/ml and 240,000 CFU/ml. Regarding the risk factors, it is shown that the most influential factor in the increase in coliforms in spicy sausages is poor food handling. It is concluded that the Salchipollerias of the city of Jaén present low sanitary quality and safety in the spicy creams according to the allowed values of microbiological indicators established in the standard described above.
