FERRAMENTAS DA GESTÃO NA QUALIDADE DA CADEIAPRODUTIVA DOS SUÍNOS SOB SERVIÇO DE INSPEÇÃO MUNICIPAL DO MUNICIPIO DE SÃO LUIS – MA.
Objetivou-se apresentar as BPFs adotadas no matadouro de suínos no município de São Luís Maranhão, sob inspeção municipal. No decorrer do estudo, e nos dados da Agência de Defesa Agropecuária do Maranhão- AGED verificou-se que o Maranhão é o segundo maior produtor de suínos da região Nordeste, porém apenas 0,48% da carne suína abatida são inspecionadas, as demais de origem clandestina. O município de São Luís, Capital do Estado do Maranhão, possui apenas 01 estabelecimento registrado para abastecer toda a cidade, estabelecimento esse alvo do nosso trabalho e encontra-se localizada na porção leste da ilha de São Luís – zona rural. O trabalho evidencia que na cadeia produtiva da carne suína sob inspeção Municipal no estado do Maranhão, existe um grande leque de ferramentas gerenciais com informações técnicas e gerenciais, que influenciam na qualidade da carne suína produzida, oferecendo oportunidades de melhoria para satisfazer o consumidor final com um alimento íntegro e nutricional.
