Abstract: The crown of purple corn is an agroindustrial byproduct rich in anthocyanins, phenols, flavonoids and antioxidant compounds. The present study aimed to evaluate the microencapsulation of bioactive compounds extracted from purple corn (Zea mays L.) crowns, using maltodextrin and tara gum matrices. For this purpose, purple corn was collected from the province of Andahuaylas and the crowns were selected. Then, these crowns were ground, from the ground material an extraction was carried out by maceration followed by sonication to obtain the extracts with the bioactive compounds of interest. Finally, these extracts were microencapsulated by spray drying using different concentrations of the aforementioned encapsulating agents. The microencapsulated bioactive compounds presented total phenolic compounds between 10.06 and 10.63 mg AGE/g; total flavonoids from 1.26 to 1.60 mg quercetin/g; total anthocyanins from 0.20 to 0.30 mg/100g; antioxidant capacity from 249.40 to 356.76 μmol Trolox equivalent/g. The recorded color properties (chromas a*, b* and L) were influenced by the encapsulation temperature. The humidity of the microencapsulates varied between 7.19 and 8.17%, the hygroscopicity from 7.47 to 8.09%, the solubility between 78.35 and 87.37%, and the water activity recorded values of 0.29 to 0.32. It is concluded that treatment T2 presents appropriate and optimal physical properties compared to the other treatments, while containing the highest levels of bioactive compounds among all the microencapsulates obtained.
