Abstract: The oca is a tuber with a great nutritional value and rich in bioactive compounds, especially antioxidants, due to their importance for human health, because they help to combat oxidative stress and protect cells from damage caused by free radicals, while oxalic acid is implicated in the formation of kidney stones. For this reason, the antioxidant capacity and oxalic acid content during the freezing process of oca (Oxalis tuberosa Mol) in the processing of kcaya, which are relevant from the nutritional point of view and quality of the final product, were evaluated in the present study. The raw material used is goose of the pink Luki variety. The central composite design was used with 2 factors being time with levels of 9.5, 12,18, 24 and 26 h and temperature with levels of - 21, -18, -10.5, -3, and -0.1°C, estimating the most appropriate freezing parameters, according to their antioxidant capacity (AC) and oxalic acid (OA), considering that, during the freezing process, changes in the antioxidant activity of the goose can occur due to the rupture of the cellular structures. It was estimated that at parameters of -10.5°C /9.5 h. there is less degradation of antioxidant capacity with a value of 9.29 μm of Trolox/ g. and less increase of oxalic acid with a value of 0.196%. In conclusion, freezing significantly affects CA and AO content, thus providing useful information for the food industry.
