Abstract: Provitamin A (carotenoids), present in plant-based foods, is converted into vitamin A in the body, which is essential for the prevention of hypovitaminosis A, or vitamin A deficiency. This is a global health issue, particularly in regions with low intake of foods rich in this nutrient, potentially leading to blindness and increased child mortality. Although the consumption of foods containing carotenoids is crucial, it is important to consider the bioaccessibility of carotenoids from these foods. Thus, the objective of this work is to develop correction factors for carotenoids, considering their bioaccessibility and conversion into provitamin A. For this purpose, a literature review of the past 25 years was conducted, focusing on original scientific articles that characterized the bioaccessibility of carotenoids from different food sources. Based on the bioaccessibility percentages found, the average correction factor for foods was calculated. The results showed that bioaccessibility varies among raw vegetables, cooked vegetables, and fruits. Consequently, bioaccessibility correction factors of 0.355, 0.233, and 0.281 were determined for β-carotene and 0.519 (raw vegetables) and 0.514 (fruits) for other carotenoids. Based on these data, educational tools were developed to assist health professionals and guide the general population. These tools are fundamental for promoting a balanced and effective diet, contributing to the prevention of hypovitaminosis A and the improvement of public health.
