ESTATÍSTICA PARAMÉTRICA E NÃO PARAMÉTRICA NA AVALIAÇÃO DA ATIVIDADE ENZIMÁTICA NA FERMENTAÇÃO DO CAFÉ
Neste trabalho foram utilizadas
técnicas estatísticas paramétricas e não
paramétricas para avaliar a atividade da
amilase, durante 24 horas de fermentação,
com o uso de culturas iniciadoras em grãos de
cerejas Catuaí, provenientes de propriedades
localizadas a 900 e 1200 metros no município
de Venda Nova do Imigrante - ES. As cerejas
foram descascadas, os grãos e polpa/hush
foram separados e colocados em um tambor de
200 litros, contendo água, (20kg: 20kg: 20kg)
e culturas iniciais de bactérias. Os tratamentos
foram definidos pela adição de duas bactérias
e o grupo controle, sem início de cultura. As
atividades enzimáticas foram monitoradas a
cada 03 horas. A reação foi interrompida pela
adição de DNS e a liberação de açúcares
redutores foi avaliada pelo método DNS, sendo
a unidade de atividade enzimática definida
como a quantidade de enzima liberando 1
μmol de glicose em 1 m sob as condições do
teste. Os dados foram submetidos a testes
preliminares de distribuição de probabilidade
e homogeneidade de variâncias, identificando
a necessidade do emprego de técnicas não
paramétricas. Os testes revelaram que, a 900
m, há diferença entre os desempenhos dos tipos
de fermentação e que o desempenho geral foi
melhor nos processos mantidos até 12 h. Para
a altitude de 1200 m não foram identificadas
diferenças entre os tipos de fermentação,
no entanto, foram formados cinco grupos de
desempenho da atividade enzimática em função do tempo. Contudo, concluiu-se que
as variações da atividade enzimática se comportam diferentemente em função da
altitude e dos tratamentos.

Abstract:
In this work, parametric and nonparametric statistical techniques were
used to evaluate the amylase activity during 24 hours of fermentation with the use
of starter cultures in Catuaí cherries grains from properties located at 900 and 1200
meters in Venda Nova do Immigrant - ES. The cherries were peeled, the grains and
pulp / hush were separated and placed in a 200 liter drum containing water, (20kg:
20kg: 20kg) and initial cultures of bacteria. The treatments were defined by the addition
of two bacteria and the control group, without beginning of culture. The enzymatic
activities were monitored every 03 hours. The reaction was interrupted by the addition
of DNS and the release of reducing sugars was evaluated by DNS method, the unit of
enzyme activity being defined as the amount of enzyme releasing 1 μmol of glucose
in 1 m under the conditions of the test. The data were submitted to preliminary tests
of probability distribution and homogeneity of variances, identifying the need for non -
parametric techniques. The tests revealed that at 900 m there was a difference between
the performances of the fermentation types and that the overall performance was better
in the processes kept up to 12 h. At the altitude of 1200 m no differences were identified
between the fermentation types, however, five groups of performance of the enzymatic
activity were formed as a function of time. However, it was concluded that the variations
of the enzymatic activity behave differently according to the altitude and the treatments.
