ENGENHARIA DE MÉTODOS: ESTUDO DOS TEMPOS E MOVIMENTOS NA MELHORIA DA PREPARAÇÃO DE FOOD TRUCK NA CIDADE DE REDENÇÃO – PA
O objetivo deste trabalho é analisar os tempos gasto na execução de tarefas na preparação de um produto preparado em um food truck por meio do uso das técnicas dos estudos de tempos e movimento. O estudo de tempos e movimentos está sempre buscando identificar e eliminar tempos ocioso evitando desperdícios dentro de uma cadeia produtiva, tendo como base uma produção padronizada, após identificar os pontos frágeis podendo assim implementar elementos ou técnicas que gere melhorias. O método da pesquisa é quantitativo com técnicas da pesquisa estudo de caso, objetivando observar os valores dos tempos de ciclo, tempo normal, fator tolerância, tempo permissivo, tempo padrão e determinação da capacidade produtiva, com isto aplicamos a cronoanálise e o fluxograma na execução de tarefas na preparação de um produto num food truck. Ao termino da realização da pesquisa foi possível observar que a capacidade produtiva da microempresa seria de 307 hot-dog por dia.

Abstract:
The objective of this work is to analyze the time spent in the execution of tasks in the preparation of a product prepared in a food truck through the use of techniques of time and motion studies. The study of times and movements is always seeking to identify and eliminate idle times by avoiding wastage within a production chain, based on a standardized production, after identifying the fragile points, thus being able to implement elements or techniques that generate improvements. The research method is quantitative with case study research techniques, aiming to observe the values of cycle times, normal time, tolerance factor, permissive time, standard time and determination of the productive capacity, with this we apply the chronoanalysis and the flowchart in the execution preparation of a product in a food truck. At the end of the research it was possible to observe that the productive capacity of the microenterprise would be 307 hot dog per day.
