EM BUSCAR DE UM OLHAR DIFERENTE: REAPROVEITAMENTO DE ALIMENTOS NA FEIRA DO PRODUTOR RURAL EM BOA VISTA/RR.
Atualmente, vários estudos envolvendo o reaproveitamento de alimentos
de frutas e hortaliças têm recebido destaque e atenção. Os enfoques são diferentes
para os tipos de reaproveitamento, porém, percebe-se a preocupação em minimizar
o desperdício, a insegurança alimentar e a preservação do meio ambiente. Nesta
perspectiva uma maneira de combater o desperdício é o reaproveitamento de frutas
e hortaliças, por meio da utilização de partes não convencionais, antes desprezadas
(cascas, talos, folhas e outros resíduos) na elaboração de novos produtos. Diante
disso o objetivo deste projeto foi propor ações para reaproveitados destes alimentos
que são descartados e que poderiam beneficiar dezenas de famílias carentes boavistenses, uma vez que mediante as visitas in loco na Feira do Produtor Rural de Boa
Vista/Roraima, viu-se a grande quantidade de resíduos orgânicos de frutas, legumes
e verduras (FLV) que são desperdiçados diariamente. A pesquisa foi descritiva,
bibliográfica, quali-quantitativa com de levantamento de dados técnicos e tabulação
dos dados por meio da análise estatística. Os resultados encontrados neste trabalho
constatou-se uma variedade de frutas e verduras desperdiçadas que podem ser
reaproveitadas em salada de frutas, sucos, doces entre outros em vista que os
preços no mercado estão exorbitantes. Pode observar que 90% das pessoas
interessadas em reaproveitar os alimentos descartados pelas bancas na Feira do
Produtor Rural em 2014. Conclui-se que faz-se necessário implementar programas
e/ou técnicas de reaproveitamento voltados para todos, pois o ato de reaproveitar
alimentos é de responsabilidade de todos.

Abstract:
Currently, several studies involving the reuse of fruits and vegetables
have received prominence and attention. The approaches are different for the types
of reutilization, however, it is noticed the concern in minimizing the waste, the food
insecurity and the preservation of the environment. In this perspective, one way of
combating waste is the reuse of fruits and vegetables through the use of
unconventional, previously neglected parts (husks, stalks, leaves and other residues)
in the preparation of new products. In view of this, the objective of this project was to
propose actions for the reuse of these foods that are discarded and that could benefit
dozens of needy families in Boa Vistaense, since by means of the on-site visits at the
Fair of the Rural Producer of Boa Vista / Roraima, the large amount of organic waste
from fruits, vegetables and greens (FLV) that are wasted daily. The research was
descriptive, bibliographical, qualitative and quantitative, with the collection of
technical data and tabulation of the data through statistical analysis. The results
found in this work was verified a variety of wasted fruits and vegetables that can be
reused in fruit salad, juices, sweets among others in view that prices on the market
are exorbitant. You can observe that 90% of people interested in reusing the food
discarded by the stands at the Rural Producer Fair in 2014. It is concluded that it is
necessary to implement programs and / or reuse techniques aimed at everyone,
since the act of re-using food is of everyone's responsibility.
