Abstract: Antioxidants are very important in health because they represent a protective factor against free radicals and other pro-oxidant species responsible for the etiological and physiopathological mechanism of diseases such as diabetes, Parkinson's and Alzheimer's; For this reason, cells have developed protection systems that prevent damage derived from metabolic oxidation and exposure to stressful factors such as ultraviolet radiation. In addition to the antioxidants that can be ingested through the diet, cells synthesize some antioxidants of a protein nature known as enzymatic antioxidants and others of a peptide nature such as glutathione; the latter is of paramount importance in neutralizing the toxic products of microsomal oxidation and serves to protect the cell from damage by free radicals.
