DETERMINAÇÃO QUANTITATIVA DE CÁDMIO, CHUMBO, COBRE, CROMO, MERCÚRIO E NÍQUEL EM QUEIJOS ARTESANAIS RURAIS E INDUSTRIAIS EMPREGANDO ESPECTROFOTOMETRIA UV-VIS.
O queijo é um produto de origem milenar, fabricado e consumido desde a época dos egípcios, sendo um alimento muito presente no cotidiano das pessoas. Eles podem ser primariamente diferenciados entre industrializados e artesanais, sendo este segundo por ser fabricado em escala reduzida e sem padrões controles de qualidade mais refinados, podem vir a apresentarem alguma contaminação por metais, sendo alguns deles pesados e nocivos ao ser humano mesmo na ínfima quantidade. Por este motivo, visando ampliar o conhecimento por trás da composição química desde lácteo, este trabalho tem como objetivo a avaliação quantitativa de cádmio, chumbo, cobre, cromo, mercúrio e níquel, através de espectrofotometria UV-Vis e apresentar possíveis justificativas acerca dos resultados obtidos.

Abstract:
Cheese is a product of ancient origin manufactured and consumed since the time of the egyptians being a food very present in people's daily lives. They can be primarily differentiated between industrialized and artisanal the second being manufactured on a small scale and without more refined quality control standards may present some contamination by metals some of which are heavy and harmful to humans even in the smallest quantity. For this reason, aiming to expand the knowledge behind the chemical composition since dairy this work aims at the quantitative evaluation of cadmium lead copper chromium mercury and nickel, through UV-Vis spectrophotometry and present possible justifications about the results obtained.
