Abstract: Plants are used as food, either directly or indirectly, for example to feed animals raised for human consumption. With the rise of commerce, the agribusiness model has emerged, where profit is the business objective. This dynamic brings environmental problems, including the risk to certain species of native plants, making the potential of these plants (both economic and food) not so much known. Many of these species are called PANCs (Non-Conventional Food Plants), which have parts or portions that can be eaten. PANCs have not been widely studied, which is why this study aimed to determine the moisture content and Fe, Mn and Zn in azedinha, capuchinha, peixinho da horta and vinagreira, as well as the bioaccessibility of these elements. The determination of moisture indicated percentages of 94.5; 88.4; 81.2 and 85.8 in the azedinha, capuchinha, peixinho da horta and vinagreira plants, respectively. As for determining the total concentration of the elements, the results showed that the peixinho da horta had the highest concentration of Fe (10.55 mg/100 g of fresh plant), the azedinha stood out from the other plants in terms of Mn concentration (2.114 mg/100 g), while the capuchinha had the highest Zn content (0.7186 mg/100 g). In terms of bioaccessibility, Mn had the highest values (25-67%) and Fe the lowest (1.17-8.10%). In general, the concentration of elements varied from PANC to PANC, as the amount of minerals can vary according to the plant's absorption behavior and accumulation of the elements, as well as the soil in which the PANC was grown. Finally, it was possible to observe that bioaccessibility varied according to the total concentration of the element and based on the constituents of the plant, such as fiber content and the presence of anthocyanins, for example.
