Abstract: Aworkteam was coordinated for the realization of a Continuous Improvement Project, which was carried out in the company Spaces Cafeteria, located in Calz. Gral. Mariano Escobedo 526-8,9,10 and 11 floors, Anzures, Miguel Hidalgo, 11590 Ciudad de México, CDMX, in the department of kitchen, where the following areas of opportunity were located: The Spaces Cafeteria is a place where their customers, usually workers from different companies, consume their daily food. The actual situation of the enterprise is good, but it has been detected certain problems in the part of the prepa- ration of the food and the portions that are cooked and served, that’s because usually a considerable quantity of food is discarded, that’s why we´ve decided to implement a Continuous Improvement project which involves introducing better work tools for food preparation and measurement of portions at the moment when the food is served, this is from a perspective that generates earnings and at the same time, decrease the discarded weekly food.
