Abstract: Bovine brucellosis is a zoonotic disease, caused mainly by the bacteria Brucella abortus, which can be transmitted to humans through the consumption of milk and meat from infected animals. In cattle, infection occurs through the oral and respiratory tract, especially during birth or abortion. As one of the main exporters of animal protein, Brazil needs to maintain strict supervision of meat production to ensure consumer safety and animal welfare. The study aimed to analyze and describe the procedures adopted for the management and disposal of bovine carcasses and viscera contaminated by brucellosis in slaughter establishments under federal inspection in Brazil over the period from 2010 to 2022, through data obtained through reports published on the Federal Inspection Service Management Information System (SIGSIF) portal. Between 2010 and 2022, 299,953,909 cattle were slaughtered in Brazil, of which 104,492 pieces were condemned for brucellosis, including 12,528 carcasses. These condemned parts are usually sent to a grease plant or incineration to safely dispose of the contaminated materials. Some parts may be released for consumption after rigorous inspections and removal of affected areas. Methods such as thermal sterilization and salting are also used to treat these pieces, ensuring the elimination of pathogens and food safety. Sanitary control is crucial to minimize losses and guarantee the quality of beef, essential to maintain productivity and food security in Brazil.
