Abstract: Brazil currently ranks third in the world in fruit production, with a wide domestic and international market, in different forms of commercialization, such as fresh fruit, pulps, decorative products, flavorings, among others. Despite market demand, fruit waste due to spoilage is recurrent, leading producers to bear financial losses. In this context, the work aims to assist family farmers in obtaining additional income and to present, in a didactic way to both society and the importance of discussing food preservation in Brazil. Solar drying emerges as a sustainable and potentially profitable alternative for producers and students, since it can add value to production while also serving as a foundation for academic studies. The methodology consists of assembling a solar dryer using low-cost materials, applied to different fruits, analyzing cutting diameter and drying time, with the aim of preserving nutritional value and extending shelf life. It is expected that the application of this method will prove viable and economical for producers, helping to reduce food losses while also supporting family farming.
