Abstract: Quinoa (Chenopodium quinoa Willd.) is an Andean grain that in the last 15 years took a great commercial importance. One of the drawbacks is the presence of an antinutrition factor known as saponin. The objective of this research was to evaluate the inhibitory effect of coatings made from saponin quinoa applied on Penicillium digitatum isolated strain and codified strain. In vivo tests of the coatings were performed on four presented, 15,000, 11300, 7500 and 3700 ppm; The quality parameters were evaluated: damage index, firmness and presence of fungi. The loss of firmness was 6.6% in the samples with an approach of a concentration of 15000 ppm and the control samples showed 5.96% loss of firmness and the damage index from the isolated strain was 11.49 and the strain encoded was 10.02. On the other hand, the presence of fungi in the samples with a concentration of 15,000 ppm at 13 days, while the pattern sample occurred in seven days, thus showing a difference of five days of delay. It is concluded that the coatings in this research are a good alternative for the control of green rot and that it delays its appearance.
