Abstract: Coffee production assumes a prominent role within the national agricultural landscape. Confronted with the challenges posed by climate change and the imposition of increasingly stringent market criteria, the evaluation of productivity transcends traditional parameters. This shift allows for nuanced discussions concerning enhancements in product quality and a relentless pursuit of heightened sustainability within the production paradigm. Efficiency in the utilization of natural resources, notably water and inputs, stands as a foundational tenet for the establishment of ecologically sustainable systems. Within this framework, this theoretical investigation aspires not only to delineate the significance of coffee cultivation in Espírito Santo but also to underscore the ramifications of drought. Furthermore, it advocates for water management as an indispensable component safeguarding the productivity and sustainability of coffee plantations. The research posits an approach accentuating the potential adverse impacts stemming from climatic events. The ensuing analysis will succinctly expound upon the physiological responses of plants subjected to water stress, elucidating the perils to crop productivity resulting from climatic variability. Notably, the diminishing water availability emerges as a formidable challenge in the global agricultural landscape. The sought-after conclusion of this research converges on the readers' comprehension that agronomic practices oriented towards meticulous management endow coffee production with substantial resilience. These practices, therefore, manifest as pivotal constituents underpinning the sustainability of coffee farming within the state and national milieu.
