Abstract: Avena sativa, commonly known as oats, is a cereal species of significant agricultural and scientific relevance, traditionally used in the food industry due to its functional properties and nutritional value. It currently ranks sixth among the most cultivated cereals worldwide, highlighting its economic importance and versatility within the production chain. In recent years, increasing interest in this species has emerged within the cosmetic industry, driven by the diversity of its bioactive constituents and their associated biological activities. Among these compounds are β-glucans, avenanthramides, flavonoids, unsaponifiable lipids and phenolic derivatives, which provide antioxidant, moisturizing, anti-itch, anti-inflammatory and skin-barrier-strengthening effects. Scientific evidence demonstrates the efficacy of Avena sativa derivatives in dermatological conditions such as eczema, atopic dermatitis, skin irritation, xerosis and pruritus of various origins, in both humans and companion animals. The use of extracts, lipid fractions, hydrolysates and colloidal oat formulations has proven promising in dermocosmetic products aimed at restoring skin homeostasis, reducing inflammatory processes and alleviating sensory discomfort. In this context, this chapter aims to present a comprehensive and updated literature review on the properties of Avena sativa and its derivatives, addressing its morphology, chemical composition, biological activities, established cosmetic applications and emerging potential. Market trends and future perspectives for the development of cosmetic and cosmeceutical products containing oats are also discussed, considering the growing demand for natural, safe, multifunctional and sustainable ingredients.
