Abstract: This article is the result of an ethnographic study that took place between May and September of 2024, at Barraca Marulho, located in Praia do Futuro, in Fortaleza, Ceará. The research focuses on the technical chain and the food culture of crab preparation – selection, slaughter, cleaning, cooking and preservation. These are practices that require knowledge, expertise and, mainly, the ability to solve problems such as, for example, the creation of tools for specific actions. According to the agents involved, each barraca in Praia do Futuro has a unique way of preparing crab. This diversity is expressed through the technical chain. These practices contributed to the recognition of the barracas as Brazilian cultural heritage on January 7, 2025, through law n° 15.092. What I present on this occasion is the partial result of the beginning of a cultural inventory that is underway – related to the food culture of the barracas in Praia do Futuro.
