Abstract: Changes in food systems and lifestyles have promoted a nutritional transition characterized by a reduction in the consumption of unprocessed foods and an increase in the intake of processed and ultra-processed foods. This change cannot be attributed solely to isolated factors, but to a combination of aspects such as culture, globalization, socioeconomic conditions, and rapid urbanization. In this context, the objective of this study was to investigate the consumption and consumer profile of processed and ultra-processed foods. Regarding materials and methods, data were obtained through an electronic form created in Google Forms and disseminated on social media. The results revealed that the majority of participants were female and had completed or were pursuing higher education. It was also observed that most participants reported not having chronic non-communicable diseases, although they had a family history of these diseases. Furthermore, weekly consumption of processed and ultra-processed foods was observed, with taste and convenience being the main factors of preference, and not necessarily economic factors. This study contributes to the understanding of consumer behavior and profiles, demonstrating that the consumption of these foods is not only associated with economic factors, but also with behavioral and lifestyle aspects.
