CONSIDERAÇÕES SOBRE O MANEJO PRÉ ABATE EM FUNÇÃO DE CONTUSÕES E LESÕES EM BOVINOS
O bem-estar é uma ciência relativamente nova, que reflete diretamente na qualidade de vida dos animais e essa condição humanitária de manejo de criação se estende até o abate. Desta forma, torna-se indispensável para a garantia de resultados eficientes em toda a cadeia produtiva da carne, de forma a atender as exigências e necessidades do mercado consumidor interno e externo. O embarque e o transporte para o abatedouro constituem etapas importantes do manejo pré-abate dos bovinos de corte, pois muitos fatores estão envolvidos, como por exemplo: tipo e condição do veículo, além do design da carroceria, densidade de carregamento animal, distância, tempo percorrido, condições das estradas, tipo de pavimentação das estradas, treinamento dos funcionários, em especial à qualidade do motorista, condições ambientais e climáticas, sem falar do comportamento, sexo e raça do animal. Todos estes fatores podem comprometer o bem-estar e, com isso, a qualidade e o rendimento da carne. As contusões nas carcaças dos animais abatidos representam forma de avaliação do tipo de manejo aplicado, desta forma, sua quantificação e classificação são indicativos importantes de manejo inadequado em qualquer etapa do processo, seja na propriedade rural, durante o transporte e desembarque no frigorífico, até na condução dos animais para o abate. Embora os efeitos estressantes das práticas pré-abate nos bovinos têm sido estudados em algumas regiões do mundo, ainda há pouca informação atualizada disponível na literatura acerca do impacto do transporte e das condições pré-abate sobre o bem-estar animal e a qualidade da carcaça no Brasil. Portanto, torna-se fundamental o desenvolvimento de estudos voltados ao aperfeiçoamento de novas práticas de manejo de forma a garantir o bem-estar dos animais e, consequentemente, a qualidade do produto final.

Abstract:
Welfare is a relatively new science, which directly reflects on the quality of life of animals and this humane condition of livestock handling extends to slaughter. Thus, it becomes essential to guarantee efficient results throughout the meat production chain, in order to meet the requirements and needs of the domestic and foreign consumer market. Loading and transport to the slaughterhouse are important steps in the pre-slaughter handling of beef cattle, as many factors are involved, such as: type and condition of the vehicle, animal loading density, distance, time travelled, road conditions, type of road paving, employee training, especially the quality of the driver, environmental and climatic conditions, and also behavior, sex and breed of the animal. All these factors could compromise the well-being and, therefore, the meat quality and yield. Bruises on the carcasses of slaughtered animals represent a way of evaluating the type of handling applied, thus, their quantification and classification are important indicators of inadequate handling at any stage of the process, whether on the rural property, during transport and unloading at the slaughterhouse, even driving animals for slaughter. Although the stressful effects of pre-slaughter practices on cattle have been studied in some regions of the world, there is still little new information available in the literature on the impact of transport and pre-slaughter conditions on animal welfare and carcass quality in Brazil. Therefore, it is essential the developmnet of studies based on the improving of new handling practices in order to ensure the animal well-being and, consequently, the quality of the final product.
